To go forwards or backwards in time slowly while watching a video in Quicktime Player, hold down the left and right arrows, respectively. Another way to move forwards or backwards slowly is by skipping single frames by tapping the right or left arrow.

A cool and efficient way to rewind and fast-forward Apple’s Quicktime Player is to scroll up and down while the cursor is in the Quicktime window. Scrolling up fast-forwards, and scrolling down rewinds the video.
