I have no clue why this functionality is not already native to the iPhone. It’s a feature that users have been asking… no, begging for since day one, much like this feature from Leopard, except this time, Apple hasn’t listened (keep sending those emails, they’ll cave in eventually)
Thankfully, someone has and they’ve gone and developed iCopy, a webapp that enables copy and paste for the iPhone and iPod Touch.

As described in the video, it involves copying the text to the bookmarklet (which turns it into a cookie), then selecting paste from the bookmarklet, then selecting paste again, to put it where you want it, the page will then reload with the text entered in its desired location.
It’s a really tedious process and i don’t suggest using it unless you need to because if you’re just copying a few sentences, chances are, you could type it out manually in about the same amount of time.
The author of the app says that there are a few pages which it won’t work with. furthermore, it is a very insecure process and should not be used under any circumstances for copying personal information.
