The kind folks at Lifehacker have painstakingly compiled a list of their favorite iPhone/iPod Touch applications.
The list includes everything from GPS functionality to Nintendo emulation. I will warn you however that before you go off installing these application, know that the next firmware update, 1.1.3 will BRICK your iPhone if you have any hacked applications running on it.
Furthermore, it is rumored that it will be coming out as soon as later this week and it will install itself without asking if plugged into iTunes so be sure to disable automatic syncing.
On that note, PROCEED WITH CAUTION.To install these apps, you do need Installer.app if you need help installing this, Gizmodo has a great article on how to do it.
