One of the great things that has come with the advancement of instant messaging software in the past few years is that it has become possible to combine multiple contacts, like one would in Address Book. Adium handles this in a slightly weird way, but it is actually still quite easy to do.
To combine the information for two contacts in Adium into one, simply hold Command and drag one of the contacts onto another.
This is a great, quick way to keep the information for someone together, which can often be challenging if you contact them via multiple chat protocols.
